Saving Weekend Leftovers


We had an overabundance of food this weekend! On top of all the food I bought for the weekend, my mother-in-law brought lots of fruits and veggies and our friends, The Claros, had an abundance of Chicken Pasta that they blessed us with! Our fridge NEVER looks like this! (That is why John David took this picture!) Our fridge is never full because we would waste so much food if it was and I like to be able to see everything in there! So after our family left, what were we supposed to do with all of the food? There was no way we could eat all of it without having any go to waste so I decided to freeze some of the leftovers!

This is what I froze:

2- 1 cup bags Raspberries
2-1 cup bags Pineapples (for smoothies)
2-1 cup bags Blueberries
2-4 pack Buns
1- 1/2 gallon Chicken Pasta
2-1/2 quart bags Baked Beans

So I saved food which saves us money and nothing will go to waste!

This Week's Menu

After grocery shopping last week I had $87.77 left in the budget. My husband went out to lunch one day last week and spent $10 so my remaining grocery budget for the month is $77.77. My grocery budget for this week is $38.88.

I was able to make a meal plan out of foods that are already in my freezer and pantry so my plan is to not go grocery shopping this week although we may have to pick up milk because we have less than half a gallon right now. But hopefully at the most we will spent $3 this week on groceries!

Here is my menu plan using foods on hand:

Dinners:
Monday: Dinner with father-in-law who is in town!
Tuesday: Stir Fry (Chicken, Cabbage, Broccoli, Carrots)
Wednesday: Hamburger Gravy
Thursday: Grilled Steak with Potatoes & Salad
Friday: Grilled Barbeque Salad with Salad
Saturday: Steak Fajitas

Pizza Pockets

Sunday lunch: Country Ham with Pintos & Cream Corn

Style on a Budget

Today Kelly posted about Recession Fashion-Dressing Cute for Less and wanted ideas for outfits that are under $30! Since I have been on such a tight budget since we've been married, I am somewhat of an expert on dressing inexpensively yet looking nice! Now I wouldn't say I am trendy or would be considered stylish but my style is classic and for what little money I spend on my clothes I do dress nice! My "shopping style" allows me to put together almost all of my outfits for under $30! Here are my sources of inexpensively priced clothing:

Sales

I purchased this dress at Kohl's last spring, it was 40% off right before Easter and was $12! (It is not really a dingy white like it appears...don't know why it looks like that!)

Financial Blessings

The past month has been a month of change for our family. We purchased a home, John David resigned from his position with Farm Credit, and started his job at our church on January 5. Since he resigned 2 1/2 weeks before starting his new job, we have gone 4 weeks without a paycheck! Isn't that a scary thought? Somehow we have made it this past month and have not been financially strained. We still have some money in our checking account and we still have some money in our emergency fund. We are so thankful that we have been able to go 4 weeks without pay and not be stressed about it!

Of course we didn't have a big Christmas at all, in fact John David and I didn't purchase each other anything (although we did buy each other a home for Christmas!) Since this is the 4th week, I haven't been grocery shopping and it is amazing how much food I still have and how many meals I can make when I "need" to go to the grocery store. God has definitely taken care of us and blessed us tremendously!

2009 Financial Goals

I wanted to share our financial goals for this year not only to share with my readers about how we live but also for accountability, if I write it and publish it, it better happen!!

Here are our goals:

1. Save 3 months living expenses by December 31. We cheated and used some of our emergency fund towards our home, we almost had 3 months saved but decided to borrow from ourselves instead of the bank!
2. Pay $3,000 towards our "small loan". Our home did not have appliances and needed painting, carpet cleaning, air systems cleaned, etc. so we borrowed some money, I can't wait to pay this off and have the mortgage as our only debt!
3. Make an extra principal payment every month. We plan to add whatever we can to the loan in order to get it paid off as soon as possible!
4. Keep all Miscellaneous spending (Medicine, Toiletries, Clothing, Gifts, Everything but food) under $100 a month. We've been doing this a few months now and plan to continue it to stay on budget! With CVS, coupons, and thrift stores this shouldn't be too hard!
5. Sell $500 worth of stuff from around our home by July 31. I actually began this on August 1, 2008 and so far I have sold $113.57 in little stuff around the house such as books and scrapbook supplies! I have $386.43 to go which means I have to sell $55 worth of stuff each month!! I think this will be challenging but since we moved and I am decluttering big time hopefully we will reach it!!

Car Repairs

Yesterday we had to have John David's truck repaired, the clutch went out and to fix it, the shop had to lift out his transmission which equaled to a bill over $350...no fun at all!!

However, we can still praise God in this situation because this is the first time in 2 1/2 years of marriage that we have had to put one of our vehicles in the shop (and we drive older vehicles). We also had the money available to cover it; when I started working in October, I started taking out a percentage of my earnings for a car savings account because our vehicles are getting older. That money funded most of the bill and the rest we were able to cover from our checking without having to dip into our emergency fund! God is so good and faithful and blesses us so much!

My Cooking Day

I have been cooking (and cleaning the kitchen) since 10 a.m. and have quite a bit to show for it!!

Chili:

Last night I cooked up some ground meat that had been in my fridge a few days. Today I took that meat and made a pot of chili. We will get three meals out of it!! There is some in the fridge for tomorrow night's dinner and I filled up 2 containers with chili to freeze for busy nights...nice homemade convenience foods!!

Chicken Dip:

I spent quite a bit of time preparing this chicken dip! It is a yummy (and expensive) dip with chunks of chicken, cream cheese, and cheddar and it is served with Fritos! I made this for a shower tonight for one of my dear friends! Now, I just have to bake it and put the cheddar cheese on top!!

Chicken Broth:

Since I had to boil chicken breasts to make the chicken dip, I saved the broth from the chicken!! I added salt and pepper and now I have frugal (and free) chicken broth to add to soups and casseroles!! I measured out 1 cup of broth for each container.

No-Bake Cookies:

Since I had all the ingredients on hand I decided to make a small batch of no-bake cookies for the shower tonight! I just love these and so does the bride!!

I feel very productive and it's only 2:30!!

Financial Freedom

In this current economic climate people are focusing more on their money and for many people, their debt. I listen to Dave Ramsey and Money Life and I am sometimes shocked at the amount of debt people have, but at the same time I admire them for working so hard to get themselves out of debt. Being in debt is something I can't understand because I was blessed with financially wise parents who were and are good stewards of the blessings God has given them. (I remember listening to Money Matters with my mom when Larry Burkett was the host and learned about finances even as a small child. I have always been a saver, I always saved over 50% of my babysitting money as a teenager, some of which is still safely tucked away in our down payment savings!) I was blessed to marry a man, who like me, had financially wise parents who modeled a debt free lifestyle also.

When we were married, we were both 19! We probably had $2,000-$3,000 in our savings and checking accounts combined and did not have jobs. Before we were engaged we had a financial discussion and came up with a budget of expected expenses (rent, electric, gas, groceries, etc.) (We both owned our vehicles, thanks to our parents and plan to drive them both until they just can't go anymore...we don't want car payments!) We talked with our parents and showed them the budget to convince them that we were indeed responsible enough to take care of ourselves and not go into debt. We were both blessed with scholarships & financial aid which we lived off of the next 2 years and it wasn't just beans and rice that we lived off of, we lived very comfortably, in fact we ate out and spent more on "miscellaneous" items than we do now!

We now are out of college, John David has a full time job and I am working part-time and are living debt free. We are living off his income and even putting some money into savings and anything that I earn, after tithes, is saved. We currently have savings for a down payment in the near future, our goal is to have 20% down, and we have an emergency fund that has almost 3 months living expenses (in a month and a half this goal should be reached!!) Because we have joint finances we really work as a team on keeping expenses down and saving to reach our goals. We have marital oneness in this area and have never had a fight about money or have ever tried to hide anything that we have bought from each other. I think this is through God's grace that money is not an issue in our marriage like it is in so many.

Over the last few months, since John David graduated and I have been staying home, we have cut back expenses even more. I think the main influence in this is the fact that we are getting closer to being able to purchase a home of our own and that has become a goal.
*Our grocery budget is about the same that it was the first two years but I am able to maximize those dollars even more by using coupons and stocking up on items we frequently use when they are on sale.
*We have cut our miscellaneous spending by $50 which is hard to believe! It has been $125 a month but we are experimenting this month to see if we can only spend $100! This category includes health care, medicine, clothes, gifts, and toiletries. We have been blessed that we have been healthy so we rarely have medical costs, we don't spend much on clothes, try to anticipate gifts and find them on sale or make gifts, and I use coupons and CVS Extra Care Bucks to spend only a couple dollars each month on toiletries. Our biggest help in staying within this amount is staying out of stores, we used to go to Goodwill once or twice a week and now we may go once every month or two and we have noticed the savings...crazy as that sounds!

I don't know if this helps you at all but financial freedom is just that, freedom! If you are in debt, it is worth it to get it paid off...don't eat out so much, watch your "miscellaneous" spending, be content, and sell what you can and apply that to debts...it will be worth it. If you are just graduating high school or in college, avoid credit cards, don't make mistakes that will follow you and be a burden. Parents who are debt free or working your way out of debt, teach your kids about money so they will never have to worry about debt! I know we are enjoying this freedom thanks to our parent's teaching as well as God's blessing!

The Highlights of the Past Few Days

I have not been spending much time on my blog this week because it has been a pretty busy week. I have had work this week (I work on an hourly basis for Tennessee Farmers Cooperative in Communications). The work has kept me busy and I haven't had an abundance of free time to blog. 

In the free time that I do have I have been coming up with content, preparing "scripts" and props and filming for my show Life:Frugal and Simple. Episode 1 will be up tomorrow! (I have filmed a CVS ECB Tutorial and a Life:Frugal and Simple Introduction thus far.) Episode 1 is titled "Two Quick and Frugal Meals," I cook two meals that both cost under $4 each! 

We stopped back by Kroger after church Wednesday and I purchased a few more cans of Campbell's Select Soup. They are on sale this week for $1.69 and some of the old label cans (they have re-designed the label) have $1.00 off coupons which make them $.69 total. (These are also part of the buy $15 worth of Campbell's, General Mills, Pillsbury, etc. and get $3 of your order, that would take and extra $.20 off, making them $.49.) I only purchased 3 more but $.69 is still great for a quick and easy lunch or good soup for a soup and sandwich dinner!

A lovely day!

Today has been wonderful! My sweetie let me sleep in this morning so I got out of bed at 8:30 and had my quiet time! I was able to blog some this morning and I cooked a nice lunch for John David, Mike, and Brady. I made homemade pizzas, one half pepperoni/ half sausage and pepperoni and the other a tomato pizza!



The tomato turned out so beautifully that I had to take a picture! It was YUMMY too!!

John David had a work errand to run in Franklin so he left a few minutes early and I tagged along! After he took care of his business we went to Borders to pick up a book I had ordered a few weeks ago with a $5 coupon; I paid $.99 plus tax for it!



I ordered On the Way Home which is a Laura Ingalls Wilder book. I bought it to complete my Little House collection! I received the 2 Gooseberry Patch Cookbooks in the mail this afternoon. I had requested them online a few weeks back and they finally arrived!

On the way home we stopped by Target so I could pick up a few items. I got:

Oscar Meyer Hotdogs FREE with the purchase of 3 Kraft items (I bought 3 $.22 Kool Aid packets which we actually drink!)
Kellogg's Blueberry Frosted Mini Wheats $2.99 - $1 coupon with a rebate which will make it FREE!

I spent $3.15 with tax but minus the rebate it was just $.16!!

Circuit City Grand Opening/ Shopping Trip



This afternoon we went a Circuit City Grand Opening. John David left work a few minutes early and we got to the store at 4:30. It opened at 6 but we got there at 4:30 to get $50 gift cards! We were the 85th and 86th people in line!! Our waiting was a small adventure in itself...



...it rained

The rain wasn't so bad at first then it started pouring for about 10 minutes and we got wet...not soaked... just nice and wet. But the rain and clouds was a lot better than the July heat and humidity I suppose!

We decided to put our money together and we got:



They were $98 something with tax so we have about $1.60 left on one of the cards! We have been looking at Bose speakers for awhile and since we had $100 we decided to get them!!

I got all of this for $10.91! (The smaller box of Rice Krispies was $.50, the Warm Delights were $.50, the Skintimate was $.95, the Rice A Roni was $.15!!) I was especially happy about these little bargains!!

This evening my parents arrived to spend graduation weekend with us! They brought garden produce with them, fresh blackberries, peaches, tomatoes, onions, cabbage, corn, and Mom's blackberry jam (the best!!) We had fried pork chops, rice and corn for dinner and everything was yummy!

Quick, Easy, and Inexpensive Red Beans and Rice

Tonight I made my version of Red Beans and Rice. It was really good and inexpensive!

1/2 pound Smoked Sausage
1 can Red Beans
Cumin
Salt and Pepper
1 cup Instant Rice

Slice sausage (I sliced thinly, then cut them in half so they would be bite sized). Heat beans and sausage, add cumin, salt, and pepper to taste (just a few shakes!). Cook the instant rice, when rice is done, stir in with beans and sausage and serve!

We like to eat this with vinegar in it to make it soupy and tonight we added hot sauce in our bowls!

I think it cost around $2.50 for this entire meal and only took 20 minutes to cook!

New Dishes and Great Finds!

I have had a lovely week thus far!! I have had company which has been nice since I have been alone most every weekday since John David started work. Yesterday I went to Murfreesboro and picked up my mother-in-law, Annette, and brought her to our home while my father-in-law, David, was at an FFA meeting/banquet. We got home around 3:30 and John David came home early to visit. We went to Goodwill and then on to church. After church we went out for supper and then we came home.

This morning I woke up at the normal time and ate breakfast. At 9:45, Annette and I went to Belk. We went to buy dishes for my graduation present!! Here is the story on the dishes. When I got married I didn't register for dishes. I couldn't find anything I just loved. So I decided to wait until I was certain of what I wanted and that it was something I would use long-term before I bought place settings and platters and all of that. Since getting married we have used 2 sets of dishes, the first were stoneware with hearts around the edges that my mom bought for me and the second set were yellow and green dishes that Annette bought for us! I finally decided on a pattern, Mikasa French Countryside, a few months ago! They are white dishes and I love the fact that they will be dual purpose, they are going to be my everyday dishes yet they are fancy enough to be my "china" (which I don't need anyways because I would break it!!!)

Well, a few weeks ago my friends Kara and Bonnie gave me a 5-piece place setting of these dishes!! Kara said, "I have been bothered since you didn't register for dishes and I am glad you finally decided!" So of course, since I had a place setting I had to get the rest so I could use them!!



Today, Annette bought me a set of eight 5-piece place settings, a platter, serving bowl, sugar dish, and creamer for my graduation!! I am very excited!



The soup bowl is the front is part of the 5-piece place setting and I bought 4 cereal bowls so we can have big bowls of cereal!!

After our trip to Belk, we went to David and Leann Simmerman's to watch their kids while Leann went to Wal-Mart. We enjoyed watching the kids and talking with Leann. After leaving there we went to the Square Market Cafe for lunch. It was amazing!! We ordered a Club Panini and a Reuben and split them! They were both wonderful!

After lunch we ran back to Belk to shop more of the sale and did pretty good there! I bought a shirt and a sweater for under $10!



The shirt was $40 that I got for $4.99 and the sweater was $32 marked down to $3.99! I was really excited especially since I have been looking everywhere for a short sleeve cardigan!

We ran by Kroger and I picked up several items there. I bought:

2 Aztec tortillas for $1 each
1 Dole salad mix for $1
1 Kraft salad dressing for $2.79( which I had a coupon for to get it FREE!)
2 Loreal Vive Products (Shampoo/Conditioner) $4.11 each (Kroger had them Buy One, Get One and I had a coupon for Buy One, Get One so I got those FREE!!)

Then, Kroger overcharged me for the tortillas so they adjusted my charges and gave me one of the tortillas FREE since it was their mistake!!

$2.70 TOTAL for all of this!!

So now I am back home and excited about washing my new dishes and eating the first meal on them!!

What's Been Going On

Again, it has been awhile since I last wrote. The reason I don't write frequently is because I don't think we have done anything exciting enough to share, but I guess the everyday is exciting!!

We had a lovely weekend. Friday night we didn't have anything planned but we did go to Goodwill to look around there. I found an Elisabeth Elliott book that I had been looking for, it was in perfect condition and only $1.49! I also found a Hallmark plate for $1.99!



I love the pretty cherries, it makes it look so cheerful! It will make a great cake plate or serving plate!!





There is a little poem on the back that says, "Please accept this simple treat for being extra kind, for when it comes to thoughtfulness, of course, you come to mind. And even when the smallest crumbs of food are finally gone, the plate is yours to keep, or else feel free to pass it on. For as you honor someone else's caring attitude, you'll be a link within a lasting chain of gratitude."

Saturday we slept until 8:30 and went to Cracker Barrel for breakfast/lunch! We both got our favorite meal that we get for both breakfast and lunch, fried chicken tenders with hash brown casserole! After eating we went to Target where I found a brown scoop neck t-shirt (I have been looking for a plain brown t-shirt everywhere with no success!) It was a great find for $2.45!! That evening we went to the Sunset Symphony. It was held at an Antebellum home and we had dinner and listened to the symphony on the lawn! It was a nice evening that we both enjoyed!

Sunday was a typical relaxing Sunday, which I enjoy and yesterday I cleaned my home and went to CVS! I did really good there! I bought:

1 4x6 photo book for $3.99 with $3.99 ECBs
2 5-pack tampons for $1.49 each with $1.49 ECBs giving me $2.98 in ECBs
2 Sally Hansen Nail Polishes for $.99 each with a coupon for $3 off, which they gave me $1.98 off making them free!

I used a $5 ECB that I had and paid $2.34 cash and received $6.97 back in ECBs!! I thought that was great, I needed some new nail polish and the little photo book has pictures from our Maine trip and it turned out really cute!

After my CVS trip I came back home and began searching on the Internet for jobs. I found a couple prospects and have made contact about them! Just pray for me as I search for a job and for Gods will for me in the future.

Sewing Day

Last night I begin working on a ragged edge quilt!! I was so excited about it last night that I tossed and turned before finally getting to sleep and then I popped out of bed at 6:15 and started sewing! I just finished it!! I am washing it so the edges will get worn!! I have decided to spend the next few days working on my sewing projects that I have been wanting to work on but haven't seemed to find the time!! I will post pictures of my projects soon!

I have had a great week especially after passing my test! It has been stress free and I have been able to get a lot done around the house!! Yesterday I meal planned and was able to come up with 7 meals when I thought we really needed to go to the grocery store!! It amazes me how taking a little time and doing a little planning saves money and time!!

My Week

This past week has been a pretty good one and pretty productive! I spent Monday and Tuesday trying to study for my upcoming CLEP Biology test but all I did pretty much was sulk because I was "bored"...a word just a month ago I said I would never use because I longed for a day when I had nothing to do!! Well I turned my "boredness" into productivity...sort of! I decided to take up reading to occupy some of my "bored" time. I began reading Ann of Green Gables again since I haven't read any of those since 7th grade! I must admit I am enjoying myself!

Tuesday night John David and I went out so I could get out of the house! We ended up going to Wal-Mart, where we bought nothing, J.C. Penney where he bought a shirt for work, Ross where he bought 2 shirts for work, and Goodwill! I found The Power of a Praying Wife there for $1.49! I had been looking for this book for awhile now and I was so excited that I found it! John David found a little mini TV that he is planning to use for video playback so he was happy with his purchase too and he now has plenty of short sleeve shirts to wear to work!

Yesterday I was incredibly productive! I studied Biology 4 hours, which is a praise that I was disciplined enough to do that! And today I have already studied an hour and a half and have been to CVS where I got some really great deals: 4 12-packs of Dr. Pepper, 2 bottles of Listerine Mouth Wash, 4-pack of Ivory Soap, and Aquafresh toothpaste for $13.98 and I got $10.98 in ECB's back!! YAY!!

I also have been taking care of my garden! We just had a nice rain and I had to take pictures of my plants! I had a bloom on my Cherry tomato plant earlier in the week but I was so excited that I touched it and it fell off! I now know not to touch the blooms!

Saturday Sales!

This morning we woke up pretty early and decided to go to a few yard sales! The first one we went to we didn't have any luck but at the second one I had lots of luck! The lady having the yard sale was a few years older than me and about my size so I had some clothes luck! She had great taste and I picked up several great pieces for only $9!!

We went to a few more yard sales and the only other thing I bought was quilt batting for a queen/king size quilt for $1...so now I have to make a new quilt!

After the yard sales, we went to the Franklin Farmer's Market which is awesome! I was sad there weren't any farm fresh strawberries...I was so spoiled growing up and always having fresh strawberries! Then we went to A&W for lunch and of course a Root Beer!!

On the way home we stopped at Publix, not because I needed more groceries, but because I had a few coupons I needed to use! I had never shopped at a Publix and I really liked it! I bought 2 boxes of Kashi granola bars for $1.39! We ended up buying 2 boxes of cereal, 2 bottles of Welches grape juice, ice cream cones, granola, Green Giant frozen broccoli and spinach and a few more items for under $18!!

We've had a great day and it isn't even over!

This week

This week has been pretty productive and it seemed to fly by! I guess being gone all day Tuesday made the week seem shorter. Wednesday I met with the Children's Minister at church. I will be an assistant teacher with 2 year olds June 16-20 for VBS. I am sure that will be fun and keep me busy that week!

Since I have been home I have had some time to find things to keep me occupied and I decided to start using coupons and planning my meals according to the sales to save money at the grocery store. Now please don't think I am cheap because I am not! I am trying to be more frugal and wise with the money that God has blessed us with and we are working on saving up for our down payment since buying a house could be in the not so distant future for us!! Anyways, I went to Wal-Mart and using my coupons I bought a box of Honey Bunches of Oats, Post Live Active Cereal, and Grape Juicy Juice for $1.46 tax included! I thought that was pretty exciting! Then I went to Aldi for the first time and was impressed, I will probably do some more shopping there, I spent $10.02 there and then I went to Kroger and after a few coupons my grand total was $33.50 (after buying beef & ice cream for John David!) My grand total for groceries for the next two weeks was $44.98! Not bad at all...my mama would be proud!

And today I spent the morning doing a little Co-op work which kept me busy! Now I am doing laundry and doing a little house cleaning and waiting for John David to come home so we can decide what fun thing we are going to do this weekend!
