Baking & Cooking Day

I spent all of Monday afternoon and evening cooking and baking foods to put in the freezer to help make meal preparation easier!!

Here is everything I made to put in the freezer:

14 Pizza Pockets
1 Frozen Pizza
3 (1 1/2 cup) containers Pinto Beans
4 (1 1/2 cup) containers Red Beans

Pinto Beans & Red Beans. I use the pintos for Mexican Casserole (drain the juice off) as well as for beans & cornbread!! The Red Beans are for Red Beans & Rice! I found this bag of Red Beans for $.59 & it made enough for 4 meals....one can would cost that much!!

Everything that was cooked & baked today:

1 dozen Chocolate Cookies
14 Pizza Pockets
1/2 batch of Pizza Sauce
1 Frozen Pizza
3 (1 1/2 cup) containers Pinto Beans
4 (1 1/2 cup) containers Red Beans
Cornbread (We had Beans, Greens, & Cornbread for dinner!!)

I also divided some of the Manager's Special meat at Kroger.
2-4 packs of hamburgers
6 sausage patties

It did take several hours to cook all of this food & wash all those dishes but it is wonderful knowing I have beans for several meals and pizza pockets and a frozen pizza when I need a quick convenience meal!

I would love the recipe for your pizza pockets my kids would love them!

I need to go up and put more beans in the crockpot for the freezer...however my mother is getting upset with me filling up the freezer and we don't have a deep freeze.
